recipe sharing

ideally, i would like to share a recipe a day. realistically, twice a week is probably more do-able.

i am a big fan of simple recipes, especially crock-pot recipes, that allow me to get home from work after picking up baby bird from childcare and spend time playing with her instead of over an hour in the kitchen cooking.

here is today’s recipe share:

veggie lasagna (crock-pot style)

Vegetable-Lasagna

ingredients:
1.5 cups mozzarella cheese
1.5 cups ricotta cheese
.5 cup parmesan cheese
1 egg
1 tsp dried oregano
.25 tsp garlic powder
1 cup marinara sauce
1 medium zucchini
4 no boil lasagna noodles
6 oz. baby spinach

8 oz. fresh mushrooms
fresh basil leaves

preparation:

1. spray crock pot. dice zucchini, slice mushrooms, slize mozza, grate parmesan
2. in a small bowl mix together mozza, ricotta, parmesan, egg, oregano & garlic powder
3. spread 2 tbsp marinara sauce in bottom of crock pot. sprinkle half the zucchini over sauce and top with one third of the cheese mixture. break 2 noodles into pieces and cover cheese layer. spread 2 tbsp sauce and then layer half of the spinach with sauce and half of the mushrooms. repeat layering, ending with sauce and the remaining chesse. firmly press ingredients into crock pot.
4. cook on low for 4-5 hours. allow lasagna to rest 20 minutes before cutting into wedges to serve. spoon a little extra sauce over each serving.
